Castello Romitorio was founded in 1984 by the Italian artist Sandro Chia, and Franco Martini, whose family has been producing Brunello di Montalcino for generations. Using a combination of large barrels and French oak for long, patient aging, the wood is never the star, but a supporting actor in the evolution of the wine. Barrell aging is followed by rest in the bottle, far exceeding the time dictated by regulations of Brunello di Montalcino. Under the leadership of their sons, Filippo, and Stefano, the estate began a transition to organic farming in March 2020, with the vineyards to be fully certified by March 2023.
